Hi Matt,
as long as you're using official distribution packages, you may send us (privately) the whole core dumps as binary, we are often able to find the debug symbols based on the build id. Especially in this case we'll probably need to do some major memory inspection anyway.
If you're running your own build, we recommend not stripping the debug symbols at all.
